One of my most popular videos is when I learnt how to cut onions Faster. Back then,
I thought It was pretty NEAT to challenge the traditional onion cutting technique,
With a MUCH FASTER version, coming from the streets.
Here we are, four years later, and, even though I have cut hundreds of onions since that video,
I am sorry to report that : I haven’t been using that COOL LOOKING technique that much.
Reason : It has two major FLAWS :
1 : It’s lacking Control. It mostly produces UNEVEN rough cuts and Not all recipes ask for UNEVEN rough cuts. No consistency + You can’t easily adjust the size of your end pieces by changing the pitch of your cutting…
2 : In the context of home cooking, home : the safe place, the street method is pretty unsafe. Its speed combined with its roughness, plus the fact that The blade is not guided so much, could spin out of control at any time for what I know….
That is why, I always, always, come back to the traditional onion cutting technique.
So in this video I tried to improve every little aspect of my onion cutting technique, using James Clear principle : the aggregation of marginal gains, to shave off any seconds I can shave off. A better knife, a sharper blade, a longer blade, a more stable cutting board, a darker cutting board, clean glasses, an apron, a Dyneema glove... I used every little thing I could think of to try an improve my onion cutting record.
